Here is a very adaptable recipe for mug cake/brownie that I like to use for a quick sweet tooth fix. It's great with a dollop of ice cream or whipped cream on top!
1/4 cup cake or brownie mix
1 egg OR 1 vegan egg (see below)
2-4 TBSP water
handful of nuts, chocolate chips, fruit, whatever you've got
(optional) splash of vegetable oil
Vegan egg recipe: Mix 1 TBSP ground flax seed or whole chia seeds with 1.5 TBSP water. Let sit 5 minutes. Use in place of an egg in baking recipes.
Grease a mug with a quick spray of nonstick cooking spray, a wipe of butter, or a few drops of oil. Mix cake mix, egg, water, and optional oil. Mix in half of your nuts/chips/whatever. Pour into mug. Add reserved nuts/chips on top. Microwave on 40-50% for 1-3 minutes, checking frequently. If you used a vegan egg, leave the middle a little undercooked and it will taste like lava cake. Top with ice cream or whipped cream if you've got it. Eat with a spoon in front of your favorite show or curled up with a good book.

Nine Four Ten: Welcome to our blog!
Hi everyone!
Welcome to Kevin and Lara's (but mostly Lara's) new blog home!
As we are no longer living in Sierra Leone and no longer teaching math, we figured it was time for a new space with a new name. You can read our old adventures here if you're interested.
For now, that's all! We're hoping to continue a bit on our previous "Borrowed Kitchens" series as well as giving a very detailed review of the Mustang convertible we rented for our recent west coast road trip. Stay tuned!
